Arroz Al Curry
Slice carrots in strips
Sautee them over low heat in a little oil, until they start to get tender, but not mushy.
Add some rice. One cup for you and your pals, two cups if you're running a derelict hotel. For every cup of rice, add two cups of water.
Add curry, salt, bay leaves, and a hot chili pepper
Simmer (low heat) until liquid is mostly gone
While it's simmering, whisk 3 eggs (as if you were going to scramble them), chop some almonds, and turn on the oven
Pour the eggs over the rice and carrots and sprinkle the chopped almonds on top
Bake it for about 5 minutes then spoon it up
